My sporadic visits to Bangladesh are more often dictated by my craving for authentic Bengali food. Even though my mother is one of the best Bengali cooks in my book (not just because she’s my mother), I still yearn for the type of cooking you can only get from the country itself. The process that goes into creating a dish in Bangladesh is quite different from how my mother prepares food in her Western style kitchen with tools to match. There lies a great deal of integrity in the preparation of each meal there — spices ground fresh, meat, poultry, fish & produce purchased on the day of from local markets (where nothing is kept frozen), & the use of cookware with the build up of seasoning from years of cooking.
